Palmetto Farms began with two hives and a stretch of wild saw palmetto on Tiger Lake Road in Lake Wales. Founded by a Florida family, it's being built around four things we care about: conservation, education, hospitality, and premium Florida honey.
Six acres of working saw palmetto, deeded buildable since 1968. It's the kind of Florida that's getting harder to find, and the kind worth protecting. The bees forage it, the honey carries it, and the destination is built on it.
Our honey follows the land's blooms: wild palmetto in early summer, Brazilian pepper in fall, and seasonal wildflower between. Small-batch harvests seldom tasted outside Florida. We keep our bees healthy with minimal intervention, the way we were taught, and every jar carries the character of this specific stretch of land.
The first 25 founding members help create it. In exchange, their names live on a hive, on our Founders Wall, and in the story of how this place came to be. Founding rates are locked for life, and the circle will never be offered again.
